Do not disturb? Not perfect but it would stop interruptions

If VO was polite and not interrupting for you in the past, then I prefer your
VO to mine. The Notifications interrupted me most of the time in previous
versions of the MacOS as well. I usually just turn off the ones that annoy me
the most, or change them to something that's less likely
Yes I’m familiar with that, but usually when there’s a notification, Voiceover
won’t actually speak it until it’s done speaking the current item. Now, it is
interrupted. I’d prefer to keep the notification but simply not have it
interrupt like that. Is that no longer possible?

You should be able to make any modifications to the notification settings for
Mail in System Preferences, Notification Centre.
