You can use
apt-cache showpkg osso-af-init
to figure out what versions are available in the repos and then do
apt-get install osso-af-startup=1.25-1
to install a specific versio

I had some minor problems updating to sardine in my 686 scratchbox
target:
apt-get dist-upgrade complained about a bunch of missing files. It only
actually stopped the dist-upgrade for one, so I touched the file to work
around it:
