Two immediate reasons come to mind as to why I wouldn't use a null sender--
1. The common expectation is that null sender = NDR.
2. It would also prevent you from tracking some bounces -- i.e., it's
incompatible with VERP.

always using some real, replyable

It seems to be common understanding to use e.g. nore...@example.com to keep
people from replying to mail from example.com. The typical policy is to reject
or discard any mail
