Hi,
I can't get the information (getFeatureInfo) of the features from Postgis with
EPSG:23030, but the same request from a shapefile gives me the info.
I can get info from another layer with EPSG:4326, but not with EPSG:23030.
Is it some bug in MapServer?

What's the reason you don't want to use a layer with a label? Anyway I think
that it's doable by intercepting the WMS request in MapScript and adding the
watermark before delivering the final image back to the client.

RFC-4329 that was marking
the mimetype 'text/javascript' as obsolete, preferring mimetype
'application/javascript'. Is use of both
mimetypes interchangeable for MapServer?

You can set whatever mimetype you'd care to. The template driver makes no
assumptions in that regard...
