You can lock the iPad into a single app mode, but I doubt you?ll find any app
that is sufficiently limited in scope to be safe and stable for exhibit
installation. Commercial applications are simple not designed for exhibit
installation and iPad's are not friendly to simple customization.

You might want to look at Kiosk Pro Plus. It is used within Getty exhibitions
for the same or similar purposes.
