I am hoping to get some advice regarding computer specifications (Mac or
Windows) for a two-year digitisation program we are about to embark on.
The majority of our collection is 2D works

You would have to try pretty hard to get too much computer for your
purposes, the more RAM, the faster the processor, the faster it will
resolve and process your images. The easier variable to focus on is the
minimum specs. What youre describing is less than a year old, correct?
