[MBZ] Gas convection

Folks

We have a yellow 24 inch wide Viking gas range with gas convection oven 

It’s probably 15 years old and I bought it for $100 from the scrap metal guy … 
he picked it up on tybee and it was already setup for propane … .I’ve replaced 
an igniter with a Chinese one

I think all the convection is is a fan … you can turn convection on or off with 
a switch

I built a big new kitchen and put in a gas cooktop with a grill section. I use 
the grill frequently. Also requires a powerful vent hood. I wouldn’t use 
anything but gas, nothing else provides the control. The cooktop has regular, 
extra hot, and a simmer burners all of which I use. 

I don’t know anything about induction cookers but you can buy a single “burner” 
countertop unit to try before committing. They don’t cost much and plug into a 
20A outlet. I have thought about getting one just to try it but it is not a 
particularly compelling thought. 

I put in dual Dacor convection ovens (floor model from an appliance store that 
was closing, great price) and like the convection bake. 

Don’t forget a microwave oven (some regular ovens also do microwave, 
particularly those little ones with a big oven). And I highly recommend a 
little countertop “toaster” oven that also has convection bake and air fryer 
functions. I use it a lot rather than the big ovens. The air fryer is amazing.

Yes, this is why I like cooking with gas. You can go from full heat to zero or 
anywhere in between, instantly. I guess induction would have that property 
also, but I've never used it.

to ask the price, you can't afford it.
Questions: If you sink it in the lake, will AAA come tow you out? What
insurance company would insure it, at any cost rating? Last, but not least,
where do you get it serviced that will properly service both the motor
coach items and the boat yacht items?

I would think cast iron would be. Induction is magnetic, and iron does well 
there. You might need to sand the bottoms smooth if they are rough, to avoid 
scratching the surface.

Personally, I would only consider gas for a cooktop. If I were limited to a 
range, it would be gas but I'm not sure I've ever seen or heard of a gas 
convection oven.

I have had the glass tops before, and they are the best at being easy to clean. 
Otherwise I didn't care for them.

It's pretty much just down to what the primary chef in the house likes. There's 
not really a wrong answer unless you get something you know she doesn't want.

I like her thinking as far as having things at a decent height. We rarely use 
the lower oven on our dual oven range, but when we do it’s a PITA to have to 
get down there to take stuff in and out.

We were big proponents of convection ovens before they were common in consumer 
ovens/ranges. If you’re cooking for a large group with multiple dishes, or time 
is of the essence, convection is a great thing. However, in comparison to 
traditional cooking after using both for several decades, I don’t see a lot of 
value in convection baking/broiling. It would not be a feature I would go 
looking for, but when looking at ovens a few years ago it seemed that nearly 
all of them offered it.

We have a Maytag electric range/oven in the FL house that has a small upper 
oven and a large lower convection oven. We rarely use the lower oven except 
when entertaining or on holidays when we’re cooking for a large group of 
people. Even then, it’s not typically used as a convection oven.

If I was looking for a wall oven, I would want a similar setup with a large 
oven and a smaller one. One feature I do like is a temperature probe. It’s not 
something you use often, but with things like large roasts or turkeys it saves 
a lot of time and effort in cooking things to the proper temperature and not 
having to open the oven door.

maintain, and you can use just about any sort of dish/pan/skillet on them.

Wife wants to re-do the kitchen. SHe currently has a 25+ year old dual oven
glass cooktop range and has decided that the bottom oven is too low to put
and remove heavy pots, etc.
She's thinking of a cabinet level built-in oven - still wants to have a
skinny one and a larger one, and a separate cooktop on the counter beside
it.
In this brave new world, convection ovens are a thing, and so are induction
cooktops.
Does Anyone have experience/recommendation for or against only of these
options?

Fer sure - I think the 2020 census had a population of about 2,000. The whole 
county is probably 3,000, if that. However, once you get outside of Manistique, 
there is nothing. Literally. Hunting lodges and summer vacation cabins.

I’ve been there and the UP in general is pretty much like northern Maine. Whole 
lotta nothin.

Loads of people from the south moving to northern Maine in the last year or so 
because land is so cheap.

My cousin had a tenant that just up and left. Shes from Texas and told him 
"It's always so cold here!" That was in August. 

She just got in her car and turned south, left all the stuff in her apartment. 
Fortunately her rent was current.

I wonder how the others will fare at -20F or colder.

I actually had that on a depreciation schedule 20 years ago.
A HMMV and a Suburban.
Then he added a diesel Excursion.

Then the HMMV got sold a couple years later.
It was hardly ever driven, but when you're doing emergency work in Da 
UP, and you absolutely must get there, it did the job.

December of 2020 the farmer across the road from me (60+ years old) got 
rid of his early 21st Century Ranger (probably traded it in) and started 
driving a new Raptor. Whenever the dirt road is wet or excessively 
bumpy, that Raptor goes down the road at 10mph or less, just like the 
Ranger used to. I figure he must have really wanted a section 179 
deduction two years ago.

If I hadn't found the '18 I was considering special ordering. The new trucks 
around here START at $55,000. I could order a RAM 1500 with the v8 for like 
$46k.
In 2014 when I bought our 2010 that truck was $28k...

We also had a truck dealership, they sold medium duty trucks too. Sadly they 
seem to have closed some time back.

The "work truck" crowd around here seem to have gone up to bro-dozers. My 
neighbor had his driveway repaved a couple weeks ago. The contractor had the 
ultimate bro-dozer, big Chevy diesel dually, lifted on big stupid tires. He 
seemed like a nice guy and did nice work but had a really dumb truck.

5 more would be nice.  For us, as an infrequently-used utility vehicle, the 
mileage is definitely secondary.
Far more important is its ability to sit unused for periods of time, with no 
drama.  The V10 is a
low-tech engine, and it does this well.  It has an excellent reliability 
reputation, so far borne out
during its 4.5 years (!) with us.  (The idle control motor got sticky, so it 
would sometimes die
if you didn't feather the throttle.  That was an easy and cheap fix.)

I can buy a lot of gas for the price difference between this old truck and 
something a lot newer
with better specs.

When I lived in WI there was a GM stealership in MKE that dealt heavily in 
fleet and “work” trucks. I went there to buy my Suburban, as I wanted a very 
basic one - radio/heat/AC and that was about it. Everything at my local dealers 
was pimped up for the WI station wagon crowd.

I got a good deal on one that was pretty basic - no carpets, rubber mats - but 
that was fine with me.

I wonder if that’s a viable approach any more if there’s someone in your area 
that sell that sort of stuff?

The vast majority I find are black, white or silver.
There are some RAM trucks in a nice red but they're almost always "Bighorn" or 
"Laramie". They're way more money and have a big stupid console in the truck 
that I don't like.
I wanted a Tradesman or Classic, there are basically zero of those for sale 
anywhere near me...

I generally hate the drive-thru in any form. Last summer I was up at the great 
northern estate and decided to go to Arby's. It was mid-day and as you'd expect 
it was packed, drive-thru line out to the street. I went in and got my food 
before the line moved.

When I came back out I couldn't actually leave, the line had closed around me 
and I couldn't get back into it. Fortunately when the line finally moved the 
car behind me waited and let me out. I was amazed that nobody else was willing 
to go inside. The next time I do it I'll park better for a speedy exit.
