I'll give a shot jumpering around the rheostat with a cliplead tonight.
Do these come off the dash easily, or am I in for a nightmare?
It's trivial once the cluster is out. Removing it is not difficult.

the reostat is toast. Bypassing it is the best solution.

Aside from all of the bulbs burning out, what is the most common reason
the dash lights would fail to work on a 123 (78 300D in this case)?
Tried turning the brightness knob a bunch of times, no dice.

The brightness knob dying? Try jumping a wire across the rheostat and see
if they come on...

Easy to do, but you will have to disconnect the little tube that runs to
your oil pressure gauge. Careful cause it is situated just right for putting
a few drops of Mobil 1 onto the leg of your jeans. ... Fashion two hooks
from pieces of coat hangers and just yank the cluster straight out.
