My first thought is that you don't have a contract with them that entitles them
to total your car. You have been harmed by their insured. They owe you cash to
compensate for that harm. The value of that harm is open for negotiation.

Never heard of Encompass. They will most likely want to total it. Too many
unknowns in repairing a car that old.
If they make a fair offer, I'd take it. An '01 Nissan is nothing special;
