Wifey found a nice dual convection oven Dacor floor model for a very good price on Craigslist, that thing is awesome. Cooks about 25% more quickly in convection mode, excellent results. Propane provides about 2500 BTU for the same volume of natural gas that provides around 1000 BTU. Basically I think the two main issues are that you need to have sufficient ventilation and sufficient clearance from combustibles, more than is required for consumer kitchen appliances.
