Wifey found a nice dual convection oven Dacor floor model for a very 
good price on Craigslist, that thing is awesome.  Cooks about 25% more 
quickly in convection mode, excellent results.  I think the food tastes 
better too!

Uh, you've got that backwards.  Propane has a much higher BTU content than 
natural gas, so if anything, it will burn hotter.

Propane provides about 2500 BTU for the same volume of natural gas that 
provides around 1000 BTU.

When it comes to gases, natural gas isn't terribly efficient in a lot of 
respects

That may possibly happen somewhere but it probably depends on the 
jurisdiction and the inspectors. I know it won't happen around here so I 
have to go with a look-a-like that works good enough.

I do seem to recall reading that folks have gotten waivers from the
local building inspector.  Basically I think the two main issues are
that you need to have sufficient ventilation and sufficient clearance
from combustibles, more than is required for consumer kitchen
appliances.  They MAY also want a fire suppression system, certainly
that is required in a restaurant.

Seriously, commercial stoves have huge venting requirements for a reason.
They put out a lot more BTUs but even more important they burn a lot more
gas. They need a huge vent and just as much make-up air. Don't provide
enough makeup air and the stove starts spewing out carbon monoxide.

Set one up in a modern air tight house and they might find you one morning,
dead, from carbon monoxide poisoning.
