Not sure I have an answer to your question, but we are running mongrel (x5) and apache 2.0 (mod_proxy_balancer) also separately from the database, on a single 2-CPU low-end server with about 30K page hits a day, with no caching at all, and the load on the box is nearly zero all the time. I
