OK, I understand, but anyway copy/pasting may be sometimes the good way for 
typing characters you don't have on keyboard. I made wikipage for this purpose: 
wiki.contextgarden.net/Symbols/utf8

It seems like you use linux, try pressing shiftctrlu2013 to type 'en dash' 
nearly anywhere.

1) I think we should include in minimals a file of such kind in utf8 encoding

2) utf8 is a name of a particular encoding of Unicode (actually luatex
manage only utf8) .
It should be better something like wiki.contextgarden.net/Symbols/unicode
(but symbols are a subset of unicode so it's not perfect either)

Btw there was a non-critical error on the page: a missing ‘v’ in
“uvozovky”.

True, but as ctrl-u deletes the entire line the tradeoff for just one
character may be a bit drastic.  Anyways, thanks for the suggestion.

The reason is that Antykwa Torunska has an actual opentype feature
to do the 'TeX ligatures': tlig. Those same ligatures in the other fonts
are faked by lua code. Here is the solution:

  \definefontfeature[default]  [default]
 [mode=node,script=latn,tlig=yes]
  \usetypescript[antykwa-torunska]
  \setupbodyfont[antykwa]
