If the command works, type
$ echo $TEXMFMAIN
$ which texmfstart
$ which texexec
$ which context

You might also need to add /Applications/ConTeXtMinimals/bin to your
PATH
That can be done by adding the following two lines to your .profile:
PATH="/Applications/ConTeXtMinimals/bin:${PATH}"
