If you don't want to write your own cross-site list view web part then
there are some free options around.
The one below uses jQuery to create a list view snapshot. Just tweak your
options, add the script to a Content Editor Web Part and you're done.

Index the content with Search, create a search scope for that list only, create
managed properties that you need to use when displaying the data in the list.
Then in the other site collections use web parts which utilise Search as a data
source, restricted to the scope of the list.
