There's a tool called MKVtoolnix that allows you to extract the various
stream such as video and audio out of an mkv and it tells you what
format they are. An mkv is just a container that can have different
things in it.

I am finding some programs that only seem to be available in MKV, and I'm
pretty sure Replay Converter doesn't support this format. Is there anything
out there that is accessible and that will take the video off files with an MKV
extension?
