see the recording section of this guide for details of the recording
settings of Audacity:

To record the sound that is sent to your usb headphones, you need to set
the audio interface to wasapi, and then set the recording device to an item
which will be something like usb speakers, and have loopback as the last
word in its name. In addition, set the number of recording channels to 2
(stereo).
