The proper answer, of course, is “it depends.”

Pentax dslr metering is too hot to my taste, so in general walking around use I 
set -1/3 exp comp and go from there. My preferred setup for candid work is Av, 
with one dial controlling aperture and the other exp comp, so the baseline -1/3 
gets me in the right zip code and I adjust as I eyeball the scene. 

More considered shooting, like nature work, gets the incident meter and manual 
mode, with equivalent exp calculations as I see fit.

In the studio I’m obsessive with the incident meter and manual mode, also 
offering gentle reminders to the talent to return to the correct spot. In the 
beginning of the shoot I glance at the histogram a couple times to make sure, 
then turn it off so the talent and I can examine/discuss progress using the 
preview screen.
