The doors I get are made of mesh so don't stop the airflow (Rittal).
Simply employ a personnel manager to supply air for the conditioning.

Most tower servers these days can have conversion kits added so they fit
in towers but as Ted says, this is just extra cost if you don't need to
save floor space or need extra security.

Just remember that you need to be able to open doors on both sides of
the rack which adds to the footprint quite considerably.

Shouldn't that be mass quantities of beer?
One major difference is that rack-mounts require racks. Racks are not cheap
but they tend to look neater than a bunch of towers sitting around.
Personally, I prefer towers or pizza boxes
