If the pins are not used at all, you do not need to show them (or hide
them) on the schematic symbol - you should have no problem at all
putting a 10 pin (for example) schematic part in a 16 pin PCB
footprint - the excess pins on the footprint won't have any net shown.

If the pins are active, but not used in the current project, it is
still a good idea to show them on the schematic symbol - then you can
put "No ERC" markers on them to keep ERC happy.
