What I would love to have access to is the phrase
builder that lets you have the choir actually sing words. I arrange choral
parts for church and put up practice files that play their individual parts,
but it would be cool if they actually sang the lyrics.

Tim, I used a combination of saved presets that I was able to access
with sighted assistance. I also used a control surface to access some
settings.

Amadeus pro is the best app for this job.
I am using it every day for radio production and other things and it works fine
with voice over.

You could try Audacity.
It is free and works really well on the mac,
I have done many commercials with this program.
If you only need one track to work in, it must be fairly ok.
