Same here just finished a from scratch rebuild v4 to v6 and had no problems
using the GUI.
Going to need more details form the CEPH cluster for someone to work this
out.

just fyi, i just tested this on pve 6 (on current packages) via gui:
1) install 3 or more pve hosts
2) cluster them
3) install/init ceph on all of them
4) create 3 mons
5) create at least 1 manager
6) add osds
7) add one mds
8) create ceph fs -> works
so i guess you are either missing
OK Folk's,
I spent a good time in the lab testing cephfs creation on a 3 node proxmox
cluster in both 5.4 (latest updates) and 6.0 (latest updates). On both
versions, from the GUI, creating a cephfs does not work. I get a timeout error,
but the cephfs_data pool does get created,
