To clarify, I'm happy with my backup times, just wondering why one VM takes
radically longer than the others.

For managing GPT partitions, you can either use parted or gdisk.
The gdisk program employs a user interface similar to that of Linux's fdisk,
but gdisk modifies GPT partitions.
As a long term fdisk user, I prefer gdisk.
