pse is a pymol session file which includes all the information that you see
in your python window, like hidden residues, selections, distance
measurements, coloring, surfaces, cartoons, alignments, etc. PDB is the
protein data bank file format which is usually simply the XYZ coordinates

I'm new to PyMol and can't seem to find an answer online about the
differences between saving in pdb format and saving in pse format.
