It's working here on QGIS 3.16.3 (Ubuntu 18.04 and Windows 10).
Can you try creating a new profile (settings > user profiles > new profile)
and try again?
If not, can you share a sample of your data.

choosing Hide Column for each one takes forever).

Well, I shouldn't have spoken so fast about it working OK with a setting of 0
for "Recent Projects". I didn't try to save anything.
When I later did try to save something it saved but then immediately

Exactly -- it was a hack in place for many years because the whole
open-source geo software stack lacked robust CRS handling,

Hai risposto solo a me.
Come immaginavo, il tuo dxf non è georiferito e quindi devi georiferirlo
altrimenti non lo vedrai mai sovrapposto nelle corrette coordinate.

oggi volendo fare un confronto con alcuni vecchi shapefile ne ho creato un
nuovo con QGIS 3.10.2 e mi sono accorto che non viene più creato il file
.qpj in aggiunta al classico .prj.
Qualcuno sa dirmi da quale versione di QGIS accade ciò ?
