Chris gave some good suggestions. If you are only concerned with the geometry,
you can try these suggestions. First, make sure that you have a spatial index
on the layer. Second I think you want to dissolve the polygons, not union them.
You can also try using the Subdivide processing

I have a vector layer that I am applying styles to. It has both symbols
and labels applied in the styles.
When choosing a symbol, there is a useful feature that I can choose
whether or not to have a symbol displayed by a check box that I can
check or uncheck.

Disssolve, this reducded the number of polygons to less than ½ and is fairly
quick.. Quciker than Union.

thank you for your message. „Label export“ sounds good, but I could not find it
in 3.28. I searched the Processing Toolbox (PT) for „Label“ and for „export“
but had no luck.
What I found in PT is „Extract labels“, but that crashed QGIS immediately the
hard way.
