some remarks from someone who is still learning QGIS, having started in July
2018.
I have to deal with very different software in my job, GIS being just a part of
a larger set, and I cannot dive deep into it every day. This may not be the
common case, but I can imagine, it is not

without any problem.
Was way better than upgrading from 2.18 to 3.4.

I am testing the GDAL tools the way you explained, but I still get artifacts.
When I say artifacts, I do not mean pixels, I know what pixels are since I
started using a scanner nearly 30 years ago, I think of sudden jumps in the
lightness, which leads to lines and grids in the raster

I do not recall the exact dialog, but I also get this kind of messages when I
first opened QGIS 3.10 and 3.12.
Just go to the security settings like with every other non-App-Store
application on Mac and set QGIS to open. Just ignore the horrible message and
open QGIS again, it works.

Definitely try the Agisoft solution, it is great. We use for recording
archaeological on site and for artefacts.
