There are two ways to do this:
1. Cheesmo: form method=post action=mailto:[EMAIL PROTECTED]
2. Better: Have the form processor on the back-end e-mail the script.
Matt's scripts do this. (Google Matts archive formmail)
3. Even better: Do #2, but have a box
