Of course, something like this:
Generate a modeline using cvt
cvt 1100 700 60

Paste the modeline to xrandr as a new mode.
xrandr --newmode 

xrandr --addmode LVDS-0 1100x700_60.00

Then apply:
xrandr -s  1100x700

Either will let you change resolution.
qubes started after a change will show the new resolution, so you can
run different qubes reporting different screen sizesat the same time if
you wish.
