You can specify the intended VM(s) after the backup file argument:
$ qvm-backup-restore /foo/qubes-2020-10-27T123456 vm1 vm2
For some reason the manpage doesn't mention this syntax, but it's
shown in 'qvm-backup-restore -h'.
