I have a Nitto M-12 and I'd like to put the big Wald basket on it. I'd
probably never put much weight in it (maybe just a sleeping bag, pillow,
and sleeping pad) or maybe a light grocery run, but is the surface area of
the rack insufficient for keeping such a large basket stable?

Wow..when I look at that list,
I have a near new condition MB-2 Comp. Just put some super fat rubber on,
that barely fits. The original Ritchey tires still hold up okay but they
are a little on the skinny side for roots and rocks.

Agree. Alternatively, if you're into tools you should be able to find
something like this at your local tool/hardware store:
