My approach almost exactly matches Tony's method. In outdoor conditions
everything is more by feel/habit than by measurement or time. AeroPress
seems very forgiving to me.

No, I used to ride with 48/44/24 and it shifted great . As Ron said, just
make sure you have a FD that has sufficient drop like many Shimano doubles
