I have a nice Nitto quill stem (not sure what name this variety is),
26.0mm bar clamp diameter. 11cm length, 19.5cm quill length. The
problem is, this style of Nitto stem runs long in that the *actual*
c-to-c of the extension approaches more ~120mm; I want a
close-to-actual 11 extension!

My first 10 speed was a mid 70's powder blue LeTour. It was a great riding
bike, too bad I rear ended a parked car which put a wrinkle in the top
tube. Funny thing is, when I first rode my 2012 Salsa Casseroll, it
reminded me of the LeTour.

Ritchey makes a 26 only tire called the Speedmax Beta. It's listed as a 2
tire but measures more like 48 mm wide. Pretty fast on pavement and holds
it own off-road.

I can't believe no one has mentioned the Einstein patch kit. Every single
component of that kit (other than the wipe and quick patch, neither of
