One more thing,like you I wasn't sure what length I wpuld need so I bought the 11 in a Nitto Young from Ben's Cyclery on the web. Something like 20 bucks and nothing at all wrong with it. Used stems are easy to buy and sell here. So you won't lose much if you guess wrong or want to experiment.

Adding another data point. I changed from an 8 cm stem with Noodles to 11 cm with Albas on my Sam. If anything I could have gone shorter with the drops and maybe a bit longer with the Albas. I have the bars a litle loser now to sort of compensate. Like others have said, it matters much less
