I was in a similar situation: I had a comparably spec'd Giant with bars that were way too low for me to ride comfortably. I somewhat solved it by adding a long/tall stem and Bosco bars, but soon after built up my own Clem L. In short, the only thing MB-1 era bikes do better than a Clem is take

I once heard an interview with Jeff Jones on how to set up his H-Bar and he mentioned using a stem short enough so that you can fully utilize his bars. If the stem is too long, the curve at the front won't be used for more "aero" riding and if it is too short the grips won't be comfy either.

Lee, I will share our experiences: we bought his/her 90's era Trek 930 ATBs during the pandemic as project bikes. They both had close-to-level top tubes, much like your MB-1. I ended up buying a pair of threaded-to-threadless stem adapters and then installing shorter (and upright)

Focusing on the question, what kinds of bars do people like on their Appaloosas, I had Nitto *North Road* bars on mine for a while (now, my Grant Petersen-designed Soma *San Marcos* is wearing them). I don't think Nitto is making those bars anymore, but there are lots that are pretty similar,
