When I commute in a suit I use an old MB-3 with a similar motor/battery
combo. (Bafang)
Rim brakes work fine. No need for new wheels in my build.

I'm roasting as I write this. Have been doing this for years.
I use a Behmor 1600 as well. It gives you a lot of control over the process and
is fairly tidy. I put it on the stove/ under the hood and that gets the smoke
outside reliably.
I roast about once every ~5 days. 1/2 pound- takes
No bike mounted computer, but I've got an Apple watch that can track rides
either by itself, or can display the data coming from my phone. It's bike
independent. I use Cyclemeter as my app of choice. It's very customizable.
If I'm 'just riding' I just don't turn anything on.

A great substance I use for all kinds of fixes and optimizations: Sugru. It's
like play-doh that cures into rubber after a day. I've used to enhance zipper
pulls and provide a cushion where my wald basket wants to strike my frame.

I've found that seat angle, in addition to bar height, really affects my hand
numbness.
When my perineum is sliding forward, I have so keep more weight on my arms to
compensate.
Of course, tilted too far back, then others bits go numb.
Find your goldilocks angle.
