The paselas look very nice and are a good option but I really like the
continentals with the chili compound. I. I might give the speeds a go, that's
for the encouragement.

I have a Redwood (less fancy Ram) - it fit 700x35c Paselas (36mm actual if
I recall correctly). I think you might be able to squeeze in the SPEED Ride
tire, though making no promises. The CROSS ride would definitely not fit as
the knobs would make the tire taller than a road tread.

While Frankensteining things has it's place, I'd suggest a good solid rack
front and back is a great way to go. I use Nitto's big back rack and mini
front rack and love them. Especially since dirt roads are remote roads and
weight on racks on jouncy roads is hard on them.
