I've been thinking about this too (for my SO's 650B Clementine). I'm going
to go as wide as possible. I have two 700C Bombadils, both with ~55 mm
tyres (measured size), but one with 31 mm outside width rims and one with
24 mm outside width. I find the tyre profile *much* more
Rivendell sent our prototype with Velocity Atlas Rims and 2.15 big bens.
hadn't previously seen the Atlas in person, but they are really nice. maybe
not quite as wide as what you are talking about though.

Man, for 790 grams I'd want far more real estate than 25 mm. My SnoCat SLs
(700C) weigh about 800 grams each and are 44 mm wide -- and sold to someone
as soon as the hubs are rebuilt into the new ~400 gram Velocity Blunt SS's
(30 mm wide).
