718 Cyclery would build you a great wheel, or, incredibly, they'll teach you to 
build a great wheel (using their equipment and giving you a discount on parts) 
at one of their free seminars. Good options any way you look at it.

Shop can determine length for you application. I  recently built a wheel with 
Sapim spokes & I was pretty impressed with them. Not cheap, but good quality.

I've heard good things about Belmar Bike Shop in NJ and 718 Cyclery in 
Brooklyn.  I know Belmar is building wheels in-house and I would be 
surprised if 718 is not (They are a Riv dealer too)

I completely agree on letting the shop size it, but when I approached them, 
they asked me to figure the right spokes. Thought it was strange. Maybe 
I'll go elsewhere.

One more vote in favor of letting the shop size the spokes.  The best thing 
you can do is provide them with the hub dimensions (center to flange 
distance left and right, flange diameter left and right, and number of 
holes) if they aren't familiar with Schmidt hubs, so they can plug those 
into whatever spoke calculator they prefer.  

(I work in a shop and have built a fair number of wheels).

If you trust the shop to build the wheel, shouldn't you trust them to 
source the spokes?  36 hole 3x on 605 ERD rims and the SON28, I'm getting 
290mm.

I've used EDD  a handful of times, hasn't failed 
me yet.  If your hub and rim aren't in the database, you can enter the data 
manually.
