In case your plans are flexible and these might appeal to you:

I was at Valley of Fire two years ago with the wrong shoes.  You'll be 
hiking in red sand that once was part of the mountain.  I  recommend high 
top hiking boots to keep the sand out of your shoes.
Death Valley.  Bring a paper map.  You lose cell connection partway between 
LV and Death Valley.
Mob Museum.  VERY interesting (history of how LV came to be), more than I 
thought it would be.
Hoover Dam.  Take the longest tour you can.  Awesome. 
Red Rock Canyon.  Lots of good hikes, from easy to difficult.
