My problem with tubeless wheels is that they're super hard to mount tires

No problem then, If I was going to buy some budget prebuilt wheels I would 
have bought these even though I don't need the tubeless capacity. Alex Rims 
AT470, 17mm ID and Shimano R7000(105) hubs, DT 2.0 spokes. Wheel Shop brand 
machine built. I can't say how true they'd be, but I have a truing stand 
and many people don't. I'd also drip some oil into the nipples as that'll 
seem into the threads and make any adjustments in the future easier.

I have no issues mounting 40mm tires on 18mm internal width rims (the
Velocity Aerohead series). Don't over-obsess over rim width.

I've seen those, but those might be TOO wide. I checked the velocity site 
and the minimum recommended tire width is in the 40's starting. I'd like to 
mount 33-42 tires

Oh no! I was in a conversation with him late last year about setting up a
kickstarter for his EZ-mount wheels. No wonder he didn't follow up. I guess

Velomine has Velocity Quills laced to Miche Primato hubs for $420. I bought 
the exact same wheel set from them over a year ago for my Cross Check that 
I use to get back and forth to work. They’re not hand built, but I’ve never 
done any adjustments on them and they’ve been a solid wheel set for me.
