Hi Paul, If it's just the domain name shown in e-mails and everything, you can simply go into the General Settings in the admin UI and change the server name. It should just work.
If you want to rename the directory it's in as well, I believe you can simply rename the directory and then run rb-site upgrade on it. There shouldn't be a need to create a new site.
