i use slapcat to backup my Ldap - Database and slapadd to restore it.
Beware: stop LDAP before Backup!!!
There is no reason to stop LDAP if you are using back-bdb or back-hdb
(and if you are using back-ldbm you are also crazy).
But you might want to do a:
su ldap -c /usr/bin/db_checkpoint -1

To Backup my SAMBA Files i tar my /etc/samba/* files.
Don't forget the /etc/ldap.conf file.
