I finally found the problem which was not located on the samba server
but on the LDAP server which is our backend.
The machine had a hardware problem ( a LOT of disk write errors )
I changed the LDAP machine, then samba is now running like a charm :-)

I have had issues with newer versions of Ubuntu's samba packages not
