I have made some progress.
Removed the two iscan packages:
$ sudo dpkg --purge iscan-plugin-gt-f600
$ sudo dpkg --purge iscan
Installed these other packages I found on the Epson support site:
https://download2.ebz.epson.net/iscan/general/deb/x64/iscan-bundle-1.0.0.x64.deb.tar.gz
$ tar -zxvf
