I switched over to memcached and the problem is still there, only with the shipping settings - everything else is fine. I fired up the sample "large" project and it works correctly so it must be a configuration on my end. It could be your caching settings. If you are using filecache, then it can be that the user which is running the store doesn't have permission to the cache directory.
