The thing about editing video and film is that things will get cut out
because of the timing or the camera wasn't in the right place when they say
a particular line. In the last 10-15 years, things have been edited for

Correct. I think they also edit for time as well. Often on dvd you see
background story scenes that explain the characters better. Sometimes it is
key information that I wished that I had while I was watching the movie!
