I'm leaning towards trying to go alkaline, and a water source might be
the way, although quite pricey, so I'm asking for some guidance from

According to Young, that wouldn't be alkaline enough.
Actually 7.0 is neutral, 6.9 is slightly acidic.
My filtered tap water is 7.9 pH

I use baking soda when I get an exposure, espcially useful for food
reactions. 1 tsp in 8 oz water. Or Alka Seltzer Gold if I have to do
it very often, it has potassium and sodium.
I got slimed by a little bit of toxic mold today, and noticed that my
pH did not go acid on me- so am using
