Got a backflow in a building at the riser location, what is the preferred type
of connection at the wall which would allow for forward flow testing?

The way I have handled this if the system demand is more than the main drain
can handle is to provide a valved discharge,onto a paved area or splash
block,calculated to a size to give an equivilent flow to the system
demand.Sounds like a pain but I haven't found any other way.

What if you don't have a fire pump and the system demand is more than what can
be flowed out of the main drain (BTW, how do you measure the flow out of the
main drain?)
We typically spec a 2 1/2 single outlet (size and # of outlets dependent on
the system demand), flush-type test connection
you could simply leave a single FHV if that's suffieient for your flow; if
you start getting in to needing multiples, we'd stick a valved outlet on it
and when the test is performed, install a piece of 8 we have with 6- 2.5
FHVs, run the test, take it home for the next time we need to flow a fire
Here is the problem
Have a dry pipe system where a portion of the building is rated R and the
remainder
is A B.

EXTREME amounts of water to knock it down if you go that route. There are
several methods of handling mitigation but no specific design criteria, mostly
industry recommendations. You need to check with local Haz Mat responders,
owner's insurance underwriter, as well as other interested AHJ's
