I've removed my forwarding quite some time ago and just use VPN if I
need to access LMS.
Although I don't intend to do so, how safe is it to limit the port
forwarding and use the option "Block Incoming Connections" and set a
specific IP Address in the "Allowed IP Addresses" field?

One of my players, an old Squeezebox, is located in another location,
coupled via VPN. Unfortunately the bandwidth doesn't allow FLAC or PCM.
Can I configure LMS to transcode everything that goes to this player as
mp3 128 kBit/s?

Had the same problem and lame solved it. Do a search for lame still
needed for LMS 7.9.1 and there it is explained
