The simplest way is to use cachemgr via the command:
squidclient -U username -W cachemgr_passwd mgr:info

squidclient -U username -W cachemgr_passwd mgr:info |grep 'CPU Usage'
(obviously replacing username and cachemgr_passwd with the correct values)
